Chili Cheese Kale Chips Anyone?

Oh, yes.

It’s the moment you’ve been waiting for. It took a while, but my first month of raw food experimentation has finally paid off. As someone who is trying to live more simply, I’ve enjoyed the process of reducing my waste, streamlining my pantry, and simplifying my wardrobe, but I’ve struggled with this when it comes to eating well. A food dehydrator is not a minimalist object! It’s approximately the size of a microwave (which takes up a big chunk of prime countertop real estate); it requires a power source (unless you’re using a solar dehydrator!); and it takes TIME to make your own chips, crackers, and dried fruits. On the other hand, it enables you to make healthful, waste-free snacks from fresh, organic produce and bulk foods. And it’s pretty satisfying to make your own chips.

Seriously. If you can make your own chips, then what can’t you do?!

And even though it takes work, it is the kind of work that kids and non-cooks can take part in: washing, mixing, and slicing.

Chili Cheese Kale Chips:
[vegan, gf, raw]

1 bunch curly kale
2T extra virgin olive oil
juice from one lemon
1/4C nutritional yeast
1/4t salt
1/4t garlic powder
1/2t chili powder
ground red pepper flakes to taste

Wash kale, remove stems, and dry kale leaves. Place dry kale leaves in a large bowl, add olive oil and “massage” into kale for a few minutes until it is soft and wilted. Add remaining ingredients and toss to coat evenly. Spread out on dehydrator sheets and dehydrate at 115 degrees for 4 hours.

I love that these chips are so tasty with such a simple ingredients list. Even though they are super healthy, they won’t last long, so make extra! I multiply the recipe by thee in order to fill up my 5 tray food dehydrator. If you don’t have a dehydrator, I bet you could try it in your oven. Has anyone tried this? Do you have any great kale chip recipes? Hmm…maybe next time I’ll try barbeque.
