Feelin’ Cheesy: Love & Crackers
Amid the stress of the Kickstarter campaign, I ended last week on a bit of a low note (and the chocolate binge had to be stopped), so I should start by saying that I have been the recipient of some serious love this week:

How wonderful is that!? I’ve got some great friends.
Anyway (moving on to other forms of cheese), as a distraction this week, I decided to make my favorite cheese crackers and to finally articulate an official recipe for them. I’m not a stick-to-the-recipe kind of cook. I throw things in a pan and hope for the best, so I can never say with certainty how much of any ingredient I use (this can be both my greatest asset and my worst limitation). Apologies if this is way off, but I think it should be close enough…
Flourless Cheesy Almond Crackers
(GF, low carb, better than cheeze-its)
2C almond flour
12oz sharp cheddar cheese, shredded (about 2-3C)
1/4t salt to taste
1t garlic powder
Knead ingredients together (the dough should stick together well—if it doesn’t add more cheese).
Spread onto cookie sheet about 1/4″ thick (I use my silpat so it doesn’t stick).
Sprinkle with additional salt
Bake in 250°F oven for 2 hours until lightly browned.
Cool.
Break into bite size pieces (Here’s a thought: you could also use cookie cutters to cut them into specific shapes…oooohh…now I know what I’m doing next time!).
The coolest part of this recipe is that it can be completely zero-waste. Instead of buying packaged almond flour, I grind bulk blanched almonds with a coffee grinder—it’s a little more work, but it’s cheaper (and waste-free). Also, how can you find pre-shredded zero-waste cheese, you ask? Bring a jar to the salad bar! Thanks Zero Waste Home for the tip!
