Choosing Minimalism
Isn’t this purple kale beautiful?! Kale has been my favorite vegetable of late. With its awesome health benefits, great flavor, and easy preparation, it is an unparalleled super-food.
The most exciting part of it for me is how simple kale is to prepare. After the chaos and stress of the Kickstarter campaign, I have taken steps to actively simplify my life. The simpler, the better.
Two weeks ago I was checking my email on my phone when I awoke at 5am and again every hour or so all day long. I was checking facebook like an obsessive, scorned lover. I was refreshing my Kickstarter page hourly to see how many new facebook fans the project had. There wasn’t a spare moment that I wasn’t checking my email or studying link statistics or fretting about the prospects of meeting my goal. As soon as I did, though, I dropped it all.
I stopped checking my email hourly. I said farewell to facebook. I let it all go and I am so much more content as a result. Now I check my email intentionally instead of filling all those quiet moments with clamor. I am more present and able to appreciate the moment: the breeze, the sun, my tea, people walking by. At some point, in the middle of the day, I will sit down and read/respond to all my emails. Then I will archive them all and my inbox will be empty. No more emails slipping through the cracks. No more emails piling up.
Now that’s freedom.
Minimalist Kale:
Wash one bunch of kale, shake off excess water, remove stems, and tear into bite-size pieces.
Heat 1T of Organic Raw Coconut Oil in a wok or frying pan over medium heat.
When the pan is hot, toss in the kale coating the leaves evenly with the oil.
Cover, stir every minute or so for 3-5 min until the kale is wilted but not soggy or burnt.
Drizzle with 1t of Organic Apple Cider Vinegar and toss.
Add a pinch of salt if you like.
Serve immediately.
Simple. Beautiful. Scrumptious. Perfect!
