Time Passing & Pumpkin Mashing
Being thousands of miles away from family, we had a quiet Hawaiian Thanksgiving this year. I cooked. We ate. We watched Elf. Most significantly, though, the holiday offered an opportunity to trick ourselves into thinking it was cold outside by gorging on gourds. It didn’t really work, but the food was pretty tasty! The truth is that it has been cooler—noticeably so—which I really appreciate because now I feel like time is actually passing and I am no longer stuck in the paradise version of Groundhog Day.
This should be great for my productivity. Anyway, here’s my Thanksgiving offering:
Butternut Squash Soup This is my all-time favorite soup. I make it as often as possible! (The secret: homemade broth and plenty of nutmeg and black pepper.) Featured here with a swirl of yogurt…just for fun.
Pumpkin Ri-so so good-sotto This will be a new staple at my house. (The secret: fresh pumpkin [don't even think about the BPA-lined cans of the stuff].) I also subbed brown rice and manchego for the arborio rice and parmesan.
Lessons?
There can never be too much butternut squash soup.
Don’t underestimate the power of the savory pumpkin. I could really do without pumpkin pie, but I will take pumpkin sauteed in butter over skillet potatoes any day.
